Dating back to fifth-century China, celery has long been a well-known base ingredient in many dishes. Fresh, in-season celery plants—like those you might find at a local farmer’s market—can grow to be nearly one meter tall, vibrant green, and bursting with life. Celery’s aroma is reputed to be complex, strong, sweet, and spicy. The plant takes two years to fully develop and produce its tiny fruits, which range in color from tan to brown. The primary storage site for the essential oils are the seeds, and these are extracted by steam distillation.

Sourcing
Celery has a very long growing season (at least 15 months) and does not tolerate heat, cold, or drought well. As a biennial plant, meaning it won’t flower until its second year, it is planted in early spring and harvested in the early summer of the following year. Before harvesting, the plants are allowed to flower and produce seeds. The seeds dry and turn a grayish-brown when they are ready to be harvested. The dry seeds can fall off at the slightest breeze, so it takes a vigilant eye to harvest at just the right moment. After seed catchment, the seeds are pressed and steam distilled to produce doTERRA Celery Seed essential oil.
